  1. 1/2 cup brown rice, uncooked
  2. 1 cup water
  3. 8 ounces firm tofu, cubed
  4. 1 cup broccoli florets
  5. 1 tablespoon olive oil
  6. 1 tablespoon tamari (or soy sauce for non-GF)
  7. 1/4 teaspoon black pepper

Directions

  1. In a small saucepan over medium heat, bring water to a boil, add brown rice, reduce heat to low, cover, and simmer for 20-25 minutes until tender.
  2. In a medium skillet over medium heat, heat olive oil, add tofu cubes, and cook until golden, about 5-7 minutes.
  3. Add broccoli and tamari, stir-frying until broccoli is tender-crisp, about 5-7 minutes.
  4. Toss in cooked rice, mix well, divide into two bowls, and serve hot.
