Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups canned crushed tomatoes
- 1/2 cup crumbled feta cheese
- 1 onion , chopped
- 2 tablespoons olive oil
- 1 teaspoon oregano
- - Salt and pepper to taste
Directions
- - Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add shrimp, oregano, salt, and pepper; cook for 4-5 minutes until pink (145°F/63°C).
- - Stir in tomatoes, simmer for 10 minutes, then sprinkle feta over the top and cook for 2-3 minutes until slightly melted.
- - Serve 1 cup per portion warm.
