  1. 1 lb shrimp, peeled and deveined
  2. 4 medium zucchinis, spiralized into noodles
  3. 2 tablespoons olive oil
  4. 2 tablespoons butter
  5. 4 cloves garlic, minced
  6. 1 tablespoon lemon juice
  7. - Salt and pepper to taste

Directions

  1. - Heat olive oil and butter in a skillet over medium heat, sauté garlic for 1-2 minutes until fragrant, add shrimp, lemon juice, salt, and pepper; cook for 4-5 minutes until pink (145°F/63°C); remove and set aside.
  2. - Add zoodles to the skillet, sauté for 2-3 minutes until just tender, then mix shrimp back in.
  3. - Serve 1 cup per portion warm.
