Ingredients
- 1 cup quinoa
- 2 cups water or vegetable broth
- 2 cups fresh spinach, chopped
- 1 onion , chopped (optional for Jain)
- 2 tablespoons olive oil
- 1 teaspoon cumin
- - Salt and pepper to taste
Directions
- - In a saucepan, bring water or broth to a boil, add quinoa, reduce heat, and simmer for 12-15 minutes until fluffy; let cool slightly.
- - In a bowl, mix cooked quinoa, spinach, onion (if using), cumin, salt, and pepper; form into 8 patties.
- - Heat olive oil in a skillet over medium heat, cook patties for 4-5 minutes per side until golden.
- - Serve 2 patties per portion warm.
Storage
Refrigerate in an airtight container for up to 3 days. Reheat in skillet or microwave.
