  1. 1 cup quinoa
  2. 2 cups vegetable broth
  3. 2 cups kale, chopped
  4. 1 onion , chopped (optional for Jain)
  5. 2 cloves garlic, minced (optional for Jain)
  6. 2 tablespoons olive oil
  7. 1 teaspoon cumin
  8. - Salt and pepper to taste

Directions

  1. - In a saucepan, bring broth to a boil, add quinoa, reduce heat, and simmer for 12-15 minutes until fluffy; let cool slightly.
  2. - In a bowl, mix cooked quinoa, kale, onion, garlic (if using), cumin, salt, and pepper; form into 8 patties.
  3. - Heat olive oil in a skillet over medium heat, cook patties for 4-5 minutes per side until golden.
  4. - Serve 2 patties per portion warm.
