Ingredients
- 1 cup brown rice
- 2 cups water or vegetable broth
- 1 lb firm tofu, cubed
- 1 onion , chopped
- 2 tablespoons olive oil
- 1 teaspoon soy sauce (gluten-free if needed)
- - Salt and pepper to taste
Directions
- - In a saucepan, bring water or broth to a boil, add rice, reduce heat, and simmer for 20-25 minutes until tender.
- - Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add tofu, soy sauce, salt, and pepper; cook for 10-12 minutes until tofu is golden.
- - Mix rice with tofu mixture and serve 1.5 cups per portion warm.
