  1. 1 zucchini , cut into chunks
  2. 1 bell pepper, cut into chunks
  3. 1 cup cherry tomatoes
  4. 1 tablespoon olive oil
  5. 1 teaspoon dried rosemary
  6. 1/4 teaspoon salt

Directions

  1. - Preheat oven to 400°F (200°C).
  2. - Thread zucchini, bell pepper, and cherry tomatoes onto 4 skewers.
  3. - Brush with olive oil, sprinkle with rosemary and salt, and place on a baking sheet.
  4. - Roast for 12-15 minutes until tender, then serve 2 skewers per portion warm.
