Ingredients
- 2 whole grain tortillas (gluten-free for Gluten-Free tag)
- 1/2 cup cucumber, thinly sliced
- 1/2 cup bell pepper, sliced
- 1/4 cup low-fat shredded cheese
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a small bowl, toss cucumber and bell pepper with olive oil, lemon juice, salt, and pepper.
- Place half the veggie mixture and 2 tablespoons cheese in each tortilla.
- Roll up tightly and serve fresh.
