  2. 1 ripe avocado, pitted and mashed
  3. 1 cup cherry tomatoes, halved
  4. 1 tablespoon olive oil
  5. 1 teaspoon lemon juice
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper

Directions

  1. In a small bowl, mix mashed avocado with lemon juice, salt, and pepper.
  2. Spread half the avocado mixture over each tortilla.
  3. Top each with 1/2 cup cherry tomatoes, roll up tightly, and serve fresh.
