  1. 1/2 cup dried lentils, rinsed
  2. 1 cup water
  3. 2 cups kale, chopped
  4. 1 tablespoon olive oil
  5. 1 teaspoon lemon juice
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper

Directions

  1. In a medium saucepan over medium heat, bring water to a boil, add lentils, reduce heat to low, cover, and simmer for 15-20 minutes until tender, then drain.
  2. In a medium bowl, toss cooked lentils and kale with olive oil, lemon juice, salt, and pepper until well combined.
  3. Divide into two bowls and serve warm or chilled.
