Ingredients
- 1 cup canned chickpeas, rinsed and drained
- 4 cups vegetable broth (low-sodium for DASH)
- 2 cups kale, chopped
- 1/2 cup onion, diced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a large pot over medium heat, heat olive oil.
- Add onion and sauté until softened, about 5 minutes.
- Stir in chickpeas, vegetable broth, salt, and pepper, bringing to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Add kale and cook until wilted, about 3-5 minutes.
- Divide into four bowls and serve hot.
Storage
Refrigerate in an airtight container for up to 5 days or freeze for up to 1 month. Reheat on stovetop or microwave.
