  1. 1/2 cup brown rice, uncooked
  2. 1 cup water
  3. 1 cup canned black beans, rinsed and drained
  4. 1 tablespoon olive oil
  5. 1 teaspoon lime juice
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper

Directions

  1. In a small saucepan over medium heat, bring water to a boil, add brown rice, reduce heat to low, cover, and simmer for 20-25 minutes until tender.
  2. In a medium bowl, toss cooked rice and black beans with olive oil, lime juice, salt, and pepper until well combined.
  3. Divide into two bowls and serve warm or chilled.
