  1. 2 whole grain tortillas (gluten-free for Gluten-Free tag)
  2. 1/4 cup hummus
  3. 1/2 cup cucumber, thinly sliced
  4. 1/2 cup bell pepper, sliced
  5. 1/4 teaspoon black pepper | Unit: Teaspoon | Optional: true

Directions

  1. Spread 2 tablespoons hummus evenly over each tortilla.
  2. Place half the cucumber and bell pepper slices in each tortilla, sprinkle with black pepper if desired.
  3. Roll up tightly and serve fresh.
