Ingredients
- 12 oz whole grain pasta (e.g., spelt or brown rice)
- 2 cups canned crushed tomatoes
- 1 onion , chopped (optional for Jain)
- 2 cloves garlic, minced (optional for Jain)
- 2 tablespoons olive oil
- 1 teaspoon oregano
- - Salt and pepper to taste
Directions
- - Cook pasta in a large pot of boiling water according to package instructions (usually 10-12 minutes), drain, and set aside.
- - In a saucepan, heat olive oil, sauté onion and garlic (if using) for 3-4 minutes, add tomatoes, oregano, salt, and pepper; simmer for 15 minutes.
- - Toss pasta with marinara sauce and serve 1 cup per portion warm.
