  1. 1 lb shrimp, peeled and deveined
  2. 1 large head cauliflower, cut into florets
  3. 2 tablespoons olive oil
  4. 2 tablespoons butter
  5. 1 teaspoon garlic powder
  6. - Salt and pepper to taste

Directions

  1. - Boil cauliflower in a pot of water for 10-15 minutes until tender, drain, mash with butter, garlic powder, salt, and pepper, and set aside.
  2. - Heat olive oil in a skillet over medium heat, add shrimp, season with salt and pepper, and cook for 4-5 minutes until pink (145°F/63°C).
  3. - Serve 1 cup shrimp with 1 cup cauliflower mash per portion warm.
