Ingredients
- 4 cod fillets (6 oz each)
- 2 cups canned diced tomatoes (no sugar added)
- 1 onion , chopped
- 2 tablespoons olive oil
- 1 teaspoon oregano

Directions
- - Preheat oven to 400°F (200°C).
- - Place cod in a baking dish, top with tomatoes, onion, olive oil, oregano, salt, and pepper; bake for 20-25 minutes until cod is flaky (145°F/63°C).
