  2. 2 cups mushrooms, sliced
  3. 1 cup heavy cream
  4. 2 tablespoons olive oil
  5. 1 teaspoon thyme

Directions

  1. - Heat 1 tablespoon olive oil in a skillet over medium heat, season pork chops with thyme, salt, and pepper, and cook for 6-8 minutes per side until done (145°F/63°C); remove and set aside.
  2. - Add remaining oil and mushrooms to the skillet, sauté for 5-7 minutes, then stir in cream and simmer for 5 minutes until thickened.
  3. - Return chops to the skillet, coat with sauce, and serve each with 1/4 cup sauce warm.
