  1. 1 lb pork tenderloin, cubed
  2. 4 cups mixed bell peppers, sliced
  3. 2 tablespoons olive oil
  4. 1 teaspoon oregano
  5. - Salt and pepper to taste

Directions

  1. - Heat 1 tablespoon olive oil in a skillet over medium heat, add pork, season with oregano, salt, and pepper, and cook for 8-10 minutes until done (145°F/63°C); remove and set aside.
  2. - Add remaining oil and peppers, sauté for 5-7 minutes until tender-crisp.
  3. - Mix pork back in and serve 1 cup per portion warm.
