Ingredients
- 1 lb ham, diced
- 4 cups potatoes, diced
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 onion , chopped
- 2 tablespoons olive oil
- - Salt and pepper to taste
Directions
- - Preheat oven to 375°F (190°C).
- - Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add ham and potatoes, cook for 5-7 minutes until lightly browned.
- - Transfer to a baking dish, pour cream over the top, sprinkle with cheese, and bake for 35-40 minutes until potatoes are tender and cheese is bubbly.
- - Serve 1 cup per portion warm.
