Spaghetti with Meatballs

  1. 1 lb ground beef
  2. 12 oz whole grain spaghetti
  3. 2 cups marinara sauce
  4. 1 egg
  5. 1/4 cup breadcrumbs (whole grain)
  6. 1 onion , chopped

Directions

  1. - Cook spaghetti in a large pot of boiling water according to package instructions (usually 10-12 minutes), drain, and set aside.
  2. - In a bowl, mix beef, egg, breadcrumbs, salt, and pepper; form into 16 meatballs. Heat 1 tablespoon olive oil in a skillet over medium heat, cook meatballs for 8-10 minutes until browned, then bake at 375°F (190°C) for 15 minutes until done (160°F/71°C).
  3. - In the skillet, sauté onion with remaining oil for 3-4 minutes, add marinara, and simmer with meatballs for 10 minutes. Serve 1 cup spaghetti with 4 meatballs per portion warm.
