  1. 1/2 cup canned chickpeas, rinsed and drained
  2. 1 teaspoon olive oil
  3. 1 teaspoon fresh parsley, chopped
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon black pepper

Directions

  1. Preheat oven to 400°F.
  2. Pat chickpeas dry, toss with olive oil, parsley, salt, and pepper, and spread on a baking sheet.
  3. Roast for 15-20 minutes until crispy, shaking the pan halfway.
  4. Cool and serve 4 bites per portion (about 1/4 cup).
