  1. 8 ounces shrimp, peeled and deveined
  2. 2 medium zucchinis, spiralized into noodles
  3. 1/2 cup heavy cream
  4. 1/4 cup grated Parmesan cheese
  5. 1 tablespoon olive oil
  6. 1 teaspoon garlic, minced
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon black pepper

Directions

  1. - In a large skillet over medium heat, heat olive oil, add shrimp, garlic, salt, and pepper, and cook until pink, about 3-5 minutes (internal temperature 145°F). Remove shrimp.
  2. - In the same skillet, add heavy cream and Parmesan, stirring until thickened, about 3-5 minutes.
  3. - Add zucchini noodles, cooking for 2-3 minutes until tender, then return shrimp to skillet, toss, and divide into two bowls.
  4. - Serve warm.
