Ingredients
- 4 ounces rice noodles
- 1 cup bell pepper, sliced
- 1 tablespoon olive oil
- 1 tablespoon tamari (or soy sauce for non-GF)
- 1/4 teaspoon black pepper
Directions
- In a medium pot, bring water to a boil and cook rice noodles according to package instructions (about 5-7 minutes), then drain.
- In a medium skillet over medium heat, heat olive oil, add bell pepper, and sauté until tender-crisp, about 5-7 minutes.
- Toss in cooked noodles and tamari, mixing well, divide into two bowls, and serve hot.
Storage
Refrigerate in an airtight container for up to 3 days. Reheat in a skillet or microwave.
