  1. 4 ounces boneless chicken breast, thinly sliced
  2. 4 slices whole grain bread (gluten-free for Gluten-Free tag)
  3. 1 cup spinach, fresh
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add chicken, season with salt and pepper, and cook until browned, about 4-5 minutes per side (internal temperature 165°F).
  3. Toast bread slices if desired.
  4. Layer 2 ounces chicken and 1/2 cup spinach on two bread slices, top with remaining slices, and serve immediately.
