Ingredients
- 4 ounces boneless chicken breast, thinly sliced
- 4 slices whole grain bread (gluten-free for Gluten-Free tag)
- 1 cup spinach, fresh
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a medium skillet over medium heat, heat olive oil.
- Add chicken, season with salt and pepper, and cook until browned, about 4-5 minutes per side (internal temperature 165°F).
- Toast bread slices if desired.
- Layer 2 ounces chicken and 1/2 cup spinach on two bread slices, top with remaining slices, and serve immediately.
Storage
Best served fresh. Store components separately in the refrigerator for up to 2 days; assemble before eating.
