Steak Tacos with Guacamole

  1. 1 lb flank steak
  2. 8 corn tortillas (or lettuce leaves for Paleo)
  3. 2 avocados , mashed
  4. 1/4 cup red onion, chopped
  5. 2 tablespoons olive oil
  6. 1 tablespoon lime juice
  7. 1 teaspoon cumin
  8. - Salt and pepper to taste

Directions

  1. - Preheat grill pan to medium-high heat.
  2. - Season steak with 1 tablespoon olive oil, cumin, salt, and pepper; grill for 5-7 minutes per side until desired doneness (135°F/57°C for medium-rare), then slice thinly.
  3. - In a bowl, mix mashed avocados, onion, lime juice, remaining oil, salt, and pepper to make guacamole.
  4. - Warm tortillas, fill each with steak and guacamole, and serve 2 tacos per portion warm.
