  1. 1 lb chicken breast, cubed
  2. 4 cups cauliflower rice (fresh or frozen)
  3. 2 tablespoons olive oil
  4. 1 teaspoon garlic powder
  5. - Salt and pepper to taste

Directions

  1. - Heat 1 tablespoon olive oil in a skillet over medium heat, add chicken, season with garlic powder, salt, and pepper, and cook for 8-10 minutes until done (165°F/74°C); remove and set aside.
  2. - Add remaining oil and cauliflower rice to skillet, cook for 5-7 minutes until tender.
  3. - Mix chicken back in and serve 1 cup per portion warm.
