Ingredients
- 1 lb shrimp, peeled and deveined
- 4 cups fresh spinach, chopped
- 2 tablespoons olive oil
- 1 teaspoon dried dill

Directions
- - In a large skillet over medium-high heat, heat 1 tablespoon olive oil and cook shrimp with dill, salt, and pepper for 4-5 minutes until pink (145°F/63°C); remove and set aside.
- - Add remaining oil and spinach; sauté for 3-5 minutes until wilted, then mix in shrimp.
