  5. 1 onion , chopped

Directions

  1. - In a saucepan, bring broth to a boil, add rice, reduce heat, and simmer for 20-25 minutes until tender.
  2. - Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add sausage and cook until browned, about 5-7 minutes, then add peppers and cook for 7-10 minutes until tender.
  3. - Serve 1 cup sausage and peppers with 1/2 cup rice per portion warm.
