Directions

  1. - Heat 1 tablespoon olive oil in a skillet over medium heat, season pork with thyme, salt, and pepper, and cook for 6-8 minutes until done (145°F/63°C); slice into strips.
  2. - In a bowl, toss cucumbers with remaining olive oil, salt, and pepper.
