Ingredients
- 4 cod fillets (6 oz each)
- 2 cups canned chickpeas, rinsed and drained
- 1/4 cup red onion, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon oregano
- - Salt and pepper to taste
Directions
- - Preheat oven to 400°F (200°C).
- - Place cod in a baking dish, drizzle with 1 tablespoon olive oil, season with oregano, salt, and pepper; bake for 15-20 minutes until flaky (145°F/63°C).
- - In a bowl, mix chickpeas, onion, remaining oil, lemon juice, salt, and pepper to make salad.
- - Serve each fillet with 1/2 cup salad warm or chilled.
