Ingredients
- 4 chicken breasts (6 oz each)
- 2 cups canned artichoke hearts, drained and quartered
- 2 tablespoons olive oil
- 1 teaspoon oregano
- - Salt and pepper to taste
Directions
- - Heat 1 tablespoon olive oil in a skillet over medium heat, season chicken with oregano, salt, and pepper; cook for 6-8 minutes per side until done (165°F/74°C); remove and set aside.
- - Add remaining oil and artichokes to the skillet, sauté for 5-7 minutes until warmed through, then return chicken to the pan.
- - Serve each breast with 1/2 cup artichokes warm.
