  1. 1 lb chicken breast, cubed
  2. 1 red bell pepper, chopped
  3. 1 yellow bell pepper, chopped
  4. 1 zucchini , sliced
  5. 2 tablespoons olive oil
  6. 1 teaspoon oregano
  7. - Salt and pepper to taste

Directions

  1. - Preheat grill pan to medium-high heat.
  2. - Thread chicken, bell peppers, and zucchini onto 8 skewers, alternating ingredients.
  3. - Brush with olive oil, sprinkle with oregano, salt, and pepper.
  4. - Grill for 12-15 minutes, turning occasionally, until chicken is cooked through (165°F/74°C).
  5. - Serve 2 kebabs per portion warm.
