  1. 1 lb chicken breast, cubed
  2. 1 cup quinoa
  3. 2 cups chicken broth
  4. 1 onion , chopped
  5. 2 tablespoons olive oil
  6. 1 teaspoon oregano

Directions

  1. - Preheat oven to 375°F (190°C).
  2. - In a saucepan, bring broth to a boil, add quinoa, reduce heat, and simmer for 12-15 minutes until fluffy.
  3. - Heat 1 tablespoon olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add chicken, oregano, salt, and pepper; cook until browned, about 5-7 minutes.
  4. - Mix chicken and quinoa in a baking dish, drizzle with remaining oil, and bake for 25-30 minutes until heated through.
  5. - Serve 1 cup per portion warm.
