Ingredients
- 1 lb chicken thighs, bone-in
- 4 cups chicken broth
- 2 cups carrots, sliced
- 1 onion , chopped
- 1 cup flour (whole grain if preferred)
- 1/2 cup milk
- 2 tablespoons olive oil
- 1 teaspoon thyme
- - Salt and pepper to taste
Directions
- - Heat olive oil in a pot over medium heat, sauté onion for 3-4 minutes, add chicken, thyme, salt, and pepper; cook until browned, about 5-7 minutes, then add broth and carrots, simmer for 30 minutes.
- - In a bowl, mix flour, milk, salt, and pepper to form a dough; drop spoonfuls into simmering soup, cover, and cook for 15 minutes until dumplings are fluffy.
- - Serve 1.5 cups per portion warm.
