  1. 8 ounces sausage, ground (halal if needed)
  2. 1 cup potatoes, peeled and diced
  3. 1 tablespoon olive oil
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon black pepper

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add diced potatoes and cook, stirring occasionally, until tender and golden, about 10-12 minutes.
  3. Add sausage and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes (internal temperature 160°F).
  4. Season with salt and pepper, divide into two bowls, and serve hot.
