  1. 8 ounces chicken livers, trimmed
  2. 1 tablespoon olive oil
  3. 1/4 cup onion, diced
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon black pepper
  6. 1 cucumber , sliced into 16 rounds

Directions

  1. In a medium skillet over medium heat, heat olive oil.
  2. Add diced onion and sauté until softened, about 3-4 minutes.
  3. Add chicken livers and cook, stirring occasionally, until browned and cooked through, about 8-10 minutes (internal temperature 165°F).
  4. Transfer livers and onions to a blender or food processor, season with salt and pepper, and blend until smooth.
  5. Chill pâté in the refrigerator for at least 1 hour.
  6. Serve 1/4 cup pâté per person with 4 cucumber slices as a dipper or spread.
