Directions

  1. In a medium saucepan, bring water to a boil over high heat.
  2. Add green plantains and boil until soft, about 10-15 minutes, then drain.
  3. Mash plantains with a fork in the saucepan, mixing in olive oil, salt, and pepper until smooth.
  4. Divide into two bowls and serve warm.
