  1. 8 medium shrimp, peeled and deveined
  2. 1 lemon , cut into 2 wedges
  3. 1/4 teaspoon salt
  4. 1/4 teaspoon black pepper

Directions

  1. Bring a medium pot of water to a boil, add shrimp, and cook for 2-3 minutes until pink (internal temperature 145°F), then drain and cool in ice water.
  2. Season shrimp with salt and pepper.
  3. Divide shrimp and lemon wedges into two portions, serving 4 shrimp with 1 lemon wedge per portion to squeeze over.
