Ingredients
- 1 (5-ounce) can tuna in water, drained
- 1/2 cup white rice, uncooked
- 1 cup water
- 1 cup bell pepper, sliced
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon black pepper
Directions
- In a small saucepan over medium heat, bring water to a boil, add rice, reduce heat to low, cover, and simmer for 12-15 minutes until tender.
- In a medium skillet over medium heat, heat olive oil, add bell pepper, and sauté until tender-crisp, about 5-7 minutes.
- Flake tuna into the skillet, add cooked rice, lemon juice, and black pepper, stir-frying for 2-3 minutes until heated through.
- Divide into two bowls and serve hot.
Storage
Refrigerate in an airtight container for up to 3 days. Reheat in a skillet or microwave.
