  1. 1 (5-ounce) can tuna in water, drained
  2. 4 slices whole grain bread (gluten-free for Gluten-Free tag)
  3. 1/2 cup cucumber, thinly sliced
  4. 2 tablespoons mayonnaise
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. In a medium bowl, flake tuna with a fork, mix with mayonnaise, salt, and pepper.
  2. Spread tuna mixture evenly over two bread slices.
  3. Top each with 1/4 cup cucumber slices and remaining bread slices.
  4. Slice in half and serve immediately.
