Ingredients
- 1/2 cup quinoa, rinsed
- 1 cup water
- 1 cup mushrooms, sliced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a medium saucepan over medium heat, bring water to a boil, add quinoa, reduce heat to low, cover, and simmer for 12-15 minutes until tender.
- In a medium skillet over medium heat, heat olive oil, add mushrooms, season with salt and pepper, and sauté until tender, about 5-7 minutes.
- Divide quinoa into two bowls, top each with half the mushrooms, and serve warm.
Storage
Refrigerate in an airtight container for up to 4 days. Reheat in a microwave or stovetop.
