  1. 8 ounces lamb, cut into chunks
  2. 1/2 cup brown rice, rinsed
  3. 1 cup water
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper

Directions

  1. - In a medium saucepan, bring water to a boil, add brown rice, reduce heat to low, cover, and simmer for 20-25 minutes until tender.
  2. - Preheat grill pan or outdoor grill to medium-high heat.
  3. - Rub lamb with olive oil, salt, and pepper, and grill for 5-7 minutes per side until cooked to desired doneness (internal temperature 160°F for medium).
  4. - Serve lamb with rice, 1 plate per portion, warm.
