Ingredients
- 8 ounces boneless chicken breast
- 1/2 cup couscous (whole wheat if available)
- 1 cup water
- 1 tablespoon olive oil

Directions
- In a small saucepan over medium heat, bring water to a boil, add couscous, reduce heat to low, cover, and simmer for 8-10 minutes until tender, then fluff with a fork.
- Preheat grill pan or outdoor grill to medium-high heat.
