Ingredients
- 12 oz whole grain pasta
- 2 lbs fresh clams, scrubbed
- 1 onion , chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- - Salt and pepper to taste
Directions
- - Cook pasta in a large pot of boiling water according to package instructions (usually 10-12 minutes), drain, and set aside.
- - Heat olive oil in a skillet over medium heat, sauté onion and garlic for 3-4 minutes, add clams and broth, cover, and cook for 5-7 minutes until clams open (discard any that don't).
- - Toss pasta with clam mixture and serve 1 cup per portion warm.
