  1. 4 large bell peppers, tops cut off and seeded

  3. 1 cup cauliflower rice
  4. 1 onion , chopped
  5. 2 tablespoons olive oil
  6. 1 teaspoon garlic powder

Directions

  1. - Preheat oven to 375°F (190°C).
  2. - Heat 1 tablespoon olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add beef, garlic powder, salt, and pepper; cook until browned, about 8-10 minutes, then mix in cauliflower rice.
  3. - Stuff peppers with beef mixture, place in a baking dish, drizzle with remaining oil, and bake for 30-35 minutes until peppers are tender.
  4. - Serve 1 stuffed pepper per portion warm.
