Ingredients
- 1 lb ground turkey
- 1 egg
- 2 tablespoons almond flour
- 2 cups fresh spinach, chopped
- 1 cup canned crushed tomatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- - Salt and pepper to taste
Directions
- - Preheat oven to 375°F (190°C).
- - In a bowl, mix turkey, egg, almond flour, garlic powder, salt, and pepper; form into 16 meatballs.
- - Place meatballs on a baking sheet and bake for 20-25 minutes until cooked through (165°F/74°C).
- - In a saucepan, heat olive oil, add spinach and tomatoes, and simmer for 10 minutes; add meatballs to coat.
- - Serve 4 meatballs with sauce per portion warm.
