Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup grits
- 4 cups chicken broth
- 1/2 cup shredded cheddar cheese
- 1 onion , chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- - Salt and pepper to taste
Directions
- - In a saucepan, bring broth to a boil, add grits, reduce heat, and simmer for 20-25 minutes until thick, stirring in cheese, salt, and pepper at the end.
- - Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add shrimp, garlic powder, salt, and pepper; cook for 4-5 minutes until pink (145°F/63°C).
- - Serve 1 cup shrimp with 1/2 cup grits per portion warm.
Storage
Refrigerate shrimp and grits separately for up to 2 days. Reheat on stovetop or microwave.
