  1. 1 lb shrimp, peeled and deveined
  2. 1 cup grits
  3. 4 cups chicken broth
  4. 1/2 cup shredded cheddar cheese
  5. 1 onion , chopped
  6. 2 tablespoons olive oil
  7. 1 teaspoon garlic powder
  8. - Salt and pepper to taste

Directions

  1. - In a saucepan, bring broth to a boil, add grits, reduce heat, and simmer for 20-25 minutes until thick, stirring in cheese, salt, and pepper at the end.
  2. - Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes, add shrimp, garlic powder, salt, and pepper; cook for 4-5 minutes until pink (145°F/63°C).
  3. - Serve 1 cup shrimp with 1/2 cup grits per portion warm.
