  2. 2 medium sweet potatoes, diced
  3. 2 tablespoons olive oil

Directions

  1. - Preheat oven to 400°F (200°C).
  2. - Season pork with 1 tablespoon olive oil, thyme, salt, and pepper; place in a baking dish with sweet potatoes tossed in remaining oil, salt, and pepper; roast for 35-40 minutes until pork reaches 145°F (63°C) and potatoes are tender.
