Sausage and Zucchini Fritters

  1. 8 ounces pork sausage, ground (sugar-free for Whole30)
  2. 1 cup zucchini, grated
  3. 2 large eggs, beaten
  4. 1/4 cup almond flour (omit for Whole30, replace with 1 tbsp coconut flour)
  5. 1 tablespoon olive oil
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper

Directions

  1. In a large mixing bowl, combine ground sausage, grated zucchini, beaten eggs, almond flour (or coconut flour), salt, and pepper, mixing until well combined.
  2. Form mixture into 8 small patties (fritters).
  3. In a medium skillet over medium heat, heat olive oil.
  4. Cook fritters in batches, 3-4 minutes per side, until golden brown and cooked through (internal temperature 165°F).
  5. Serve hot, optionally with a side of fresh herbs.
