  2. 1 cup almond milk, unsweetened
  3. 1 cup water
  4. 1 cup pineapple, diced
  5. 2 tablespoons mixed nuts (e.g., almonds, walnuts), chopped

Directions

  1. In a medium saucepan over medium heat, combine quinoa, almond milk, and water, bringing to a boil.
  2. Reduce heat to low, cover, and simmer for 12-15 minutes until quinoa is tender and liquid is absorbed.
  3. Remove from heat, divide into two bowls, and top each with 1/2 cup diced pineapple and 1 tablespoon chopped nuts.
  4. Serve warm or at room temperature.
